Vegetarian Chili



A marvelous vegetable chili for all the family. Make ahead and it will taste even better the next day. 


Taste: sharp and spicy.

Time Consuming: 3 hours

Recommendation: I recommend having all the ingredients ready, including condiments. Cook it on weekend. It smells delicious. Amazing comfort food. 


Ingredients: 

1 tablespoon olive oil

1 cup red bell pepper, chopped 

2 tablespoon minced jalapeño pepper

1 can (28 ounces) organic crushed tomatoes

1 can of black beans

1 can chickpeas

1/2 cup corn

1/4 cup tomato paste

1 teaspoon sugar

1 teaspoon ground cumin

1 teaspoon dried basil

1 teaspoon chili powder

1/4 teaspoon black pepper


Steps:

1- Heat the oil in a large nonstick skillet over medium-high heat until hot. Add bell pepper, jalapeño, and stir for 5 minutes or until tender (for me was 10 minutes). 

2- Add remaining ingredients, mix well. 

3- Cover and cook for 3 hours on low.
